Penne a la Vodka

 

Servings: 4 - 6 Prep Time: 10 min. Cook Time: 25 min.

 

This dish rocks! Skip the prosciutto for a vegetarian option and try non-fat cream for a healthier alternative. 

 

INGREDIENTS

 

• 1/4 cup(s) butter, with salt

 

• 4 oz prosciutto, sliced

 

• 1/3 cup(s) vodka

 

• 1/2 cup(s) heavy whipping cream

 

• 1 lb penne rigate, dry

 

• 1 1/2 cup(s) pasta sauce (marinara)

 

• 1/2 cup(s) parmesan cheese, grated

 

DIRECTIONS

 

1. Melt butter in a large skillet over medium heat. Tear prosciutto into pieces and saute in pan until lightly colored.

 

2. Add vodka and stir until evaporated. Stir in pasta sauce and cream. Simmer uncovered for 8 - 10 minutes. Season with salt and pepper.

 

3. Cook pasta according to directions and drain. Pour vodka sauce over pasta and sprinkle with parmesan cheese. Serve. 

 

Suggested Side: Crusty French Bread and a Tossed Salad

 

Tilapia Piccata

 

Servings: 4 Prep Time: 10 min. Cook Time: 6 min.

 

Love it with chicken, love it even more with tilapia! 

 

INGREDIENTS

 

• 4 tilapia fillet(s)

 

• 2 tbsp flour

 

• 1 tbsp olive oil

 

• 1/4 cup(s) dry white wine

 

• 2 tbsp lemon juice (fresh)

 

• 1 tbsp capers, drained

 

• 2 tbsp butter, with salt, cold 

 

DIRECTIONS

 

1. Season tilapia with s&p. Dredge in flour.

 

2. Heat olive oil in a large nonstick skillet over medium-high heat. Add fish to pan; cook 2-3 minutes on each side or until fish flakes easily when tested with a fork. Remove from pan and keep warm.

 

3. Add wine, juice, and capers to pan; cook 1 minute. Add butter to pan, stirring until butter melts. Pour sauce over fish and serve. 

 

Suggested Side: angel hair pasta
